This fritter has only two main ingredients: sweet potatoes & potatoes. Sliced sweet potatoes are bound by potato starch instead of flour. It’s easy and quick. A good way to clean out my pantry. It’s like eating sweet potato fries and french fries at once.
I prefer the Asian sweet potatoes with dark purple skin and white flesh for its chestnut-like flavor over the other kinds. So that’s what I’m using here.
To make Sweet Potato-Potato Fritters:
(About 10 palm sized fritters)
3 sweet potatoes, 2 potatoes, 1/4 tsp ginger, 1/4 tsp cinnamon, 1/4 tsp salt (optional)
a. Puree the potatoes in a processor and mix in ginger, cinnamon, and salt.
b. Slice the sweet potatoes. Combine with the potato puree.
c. Over low-medium heat, coat a pan with a generous amount of cooking oil: enough to cover the entire pan. Spoon the mixture into the pan and fry until crispy on both sides.
