  • 1/2 cup Greek yogurt
  • 1/3 cup mayo I used kewpie
  • Juice from 1 large lemon
  • 1 tbsp honey
  • A pinch of salt
  • Dash of milk
  • Half of a small cabbage
  • 2 red apples

  1. Make the dressing by mixing Greek yogurt, mayo, lemon juice, honey, salt, and milk. Set aside.
  2. Shred cabbage into thin slices. I used a mandoline slicer, but you can do this with a food processor using a shredding disc. (I find the pre-shredded cabbage from the stores too thick to my liking.) After shredding, I rinse the cabbage in a salad spinner.
  3. Cut apples into matchsticks.
  4. In a large bowl, add cabbage and apple sticks. Drizzle dressing on top and toss.
  5. For my kids, I serve cabbage, apple sticks, and the dressing (as a dip) separately.
