Spinach hummus mayo dip

Blending spinach into spreads and sauces is a great way to get my kids to enjoy fresh greens. I made this spread to make wraps using leftover steak from the night before.

Spinach hummus mayo dip

Ingredients

  • 1 can (15oz) garbanzo beans, rinsed and drained
  • 2 tbsp tahini
  • 2 tsp minced garlic or 2 cloves of garlic
  • Juice of 1 lemon
  • 2 handful of baby spinach
  • 1/4 cup mayonnaise
  • 1/4 cup olive oil
  • salt to taste

Instructions

  1. Add all ingredients to a food processor and blend until smooth. You might need to stop the food processor in the middle, mix with a spatula, and blend again.

Recipe Notes

Store in an airtight container in the fridge for up to one week.
