Blending spinach into spreads and sauces is a great way to get my kids to enjoy fresh greens. I made this spread to make wraps using leftover steak from the night before.
Spinach hummus mayo dip
- 1 can (15oz) garbanzo beans, rinsed and drained
- 2 tbsp tahini
- 2 tsp minced garlic or 2 cloves of garlic
- Juice of 1 lemon
- 2 handful of baby spinach
- 1/4 cup mayonnaise
- 1/4 cup olive oil
- salt to taste
Add all ingredients to a food processor and blend until smooth. You might need to stop the food processor in the middle, mix with a spatula, and blend again.
Store in an airtight container in the fridge for up to one week.
