Ingredients

  • 1 tsp Nellie’s Free Range Butter
  • 1 Nellie’s Free Range Egg
  • 1 tbsp all-purpose flour for dusting
  • 2 tsp soy sauce
  • 1 tsp maple syrup
  • 1 sheet of nori (sushi seaweed)
  • 1/2 cup cooked medium-grain white rice
  • 1 slice of American cheese
  • 1/4 of an avocado sliced
  • 1 tbsp mayonnaise

Instructions

  1. In a nonstick skillet, melt butter over medium-low heat. Crack an egg onto the skillet. When the egg white is mostly set, fold the white over the yolk.
  2. Dust both sides of the egg with flour using a sieve.
  3. Pour a mixture of soy sauce and maple syrup over the egg and cook for an additional minute. Set the egg aside.
  4. Place a nori on a cutting board. Spread half of the rice in the center of the nori. Make sure the rice is warm but not hot. If rice is steaming hot, nori will likely tear.
  5. Place a slice of cheese, avocado slices, mayonnaise, cooked egg, and remaining rice on top.
  6. Carefully wrap the nori into a square using rice as glue. Flip it upside down and cut it in half. Wetting a knife with water before cutting can prevent the rice from sticking to the blade. Enjoy.
