School Lunch For My Kids: Korean Braised Eggs

These Korean-style braised eggs are “the best eggs ever,” according to Munchkin. I made nine eggs, hoping they would last for at least a few lunches, but they were all gone by the next day.

When I cook rice, I freeze the leftovers in single-serving portions. This morning, I simply needed to microwave one container of rice for 3 minutes.

Click here for the full recipe. These eggs can be served warm or cold, but since I packed them in a thermos with warm rice, I warmed them up in the microwave before packing. 

Champaign Grapes

My kids were so excited to see these tiny grapes. They are in season at the moment. My youngest is almost four now, and I no longer cut grapes in half, but campaign grapes also need to be halved or smushed for young toddlers and babies.

Fresh Fig

I’m also seeing a lot of fresh figs in the market right now. Munchkin loves them!
