Do you crave more flavorful food during the colder months? I’m all in for lighter and simple seasonings such as this lemon pepper chicken during the warmer months. But as soon as the temperature drops, I want flavor bombs in my mouth. If you are like me, try this oven-baked spiced chicken drumsticks recipe. My hubby and kids can’t get enough of it!

Oven-baked Spiced Chicken

Ingredients

  • 1 tbsp ground cumin
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp ground coriander
  • 1/2 tsp turmeric powder
  • 1/3 tsp ground ginger
  • 1 tbsp salt
  • 3 lb drumsticks
  • 1/4 cup olive oil

Instructions

  1. In a small bowl, combine cumin, paprika, garlic powder, coriander, turmeric, ginger, and salt.
  2. Make slits in the thick part of the drumsticks using a sharp knife to ensure they cook through. Coat drumsticks with olive oil. Rub the spice mixture on all sides of the chicken. Cover the chicken and refrigerate for up to 24 hours. (You can cook the drumsticks right away, but they become more flavorful when it has time to marinate.)
  3. Place oven rack in the middle and preheat oven to 400 F.
  4. Place the drumsticks on a parchment or foil-lined sheet pan.
  5. Bake for 40~45 min or until drumsticks are cooked through.

      For the turmeric rice, I cooked it in an instant pot.👇🏻
      1. On sauté function, add 1 tbsp of oil and 1/2 tsp of turmeric powder. Cook for 30 seconds. Add 2 cups of long grain rice (rinsed) and cook for a couple of minutes. Turn off sauté function.
      2. Add 2 cups of chicken broth and 1/2 tsp of salt.
      3. Pressure cook high for 3 minutes and natural release for 10 minutes.
