We drink smoothies (almost) every day for breakfast, but I tend to gravitate towards all-fruit smoothies. Munchkin is good with fruits, so I know it will go down well. No struggles. Quickly out the door.
But munchkin isn’t eating a lot of green vegetables on their own, and smoothies are the easiest way to incorporate them. So I resolved to make two green smoothies per week. Is that enough? I don’t know. I don’t count nutrition, calories, or pretty much anything. I just thought 2 per week; I can handle.
Don’t get me wrong; green smoothies can be tasty and kid-friendly. Cheeky munchkin finished her whole cup, smiling all the way. I simply need variation to keep me interested instead of doing green drinks all day of the week.
The beauty of spinach is that they have such a mild taste but a vibrant color. The taste is unnoticeable, but it can make the texture slightly grainy if using too much. For the yogurt, I used greek yogurt for munchkin’s smoothie (cashew-yogurt for mine) because the tanginess goes along with the apple.
Now. Drink your spinach, munchkin.
