Cucumber & Tofu Sandwich Bites for Kids Lunch

You got to try this tofu sandwich for your kids (and yourself.) It’s so easy to make, nutrient-dense, and addictively delicious! To make this sandwich, we cut Hodo Extra Firm Tofu into thin slices and then lightly seasoned and pan-fried them. Then we layered the tofu with a slice of crunchy cucumber between soft Dave’s Killer bread. This way, we get layers of yummy seasoned and fried tofu in our sandwich. Who wouldn’t love that? For little kids, cut the sandwich into bite sizes and thread with a bamboo skewer, so it’s easier for them to hold the sandwiches. My toddler likes to eat all the components separately, but whatever works, am I right? Packed in a fun Innobaby FlexNLock lunchbox, my kiddo was so excited for this lunch.

(This post is Sponsored by Hodo, but the opinions are my own.)

Hodo Extra Firm Tofu can be used straight out of the package without pressing, making it a breeze to cook with it. I love how it’s firm yet still creamy, nothing like the rubbery texture I often find in high-protein tofu. Even if you aren’t a fan of tofu, I hope you give Hodo a try, because the texture and taste are quite distinct from other Extra Firm Tofu on the market.

My youngest isn’t a big meat eater, so tofu is an excellent source of protein for her. And Hodo Extra Firm Tofu has a whopping 14g of protein in 1 serving (3 oz.) Hodo uses USDA Organic, whole food ingredients that are minimally processed. With Hodo, you know that you’re getting quality food.

In all honesty, another reason why I love tofu is that it’s easier to prepare than many other protein sources. It cooks pretty fast and can be enjoyed raw too. The fussiest part of cooking with tofu is the pressing, but you can skip that whole part with Hodo Extra Firm Tofu.

Hodo offers a delicious range of plant-based products. They are available at Wholefoods, Safeway, HEB, and your local retailer.
