Hollandaise Sauce

  • 4 Nellie's Free Range Eggs, yolks only
  • juice from half of a lemon
  • 8 tbsp Nellie's Free Range Unsalted Butter
  • 1/4 cup hot water optional
  • salt to taste
  • pinch of ground cayenne pepper

Air fryer poached eggs.

  • 4 Nellie’s Free Range Eggs
  • water
  • cooking oil spray


Hollandaise Sauce

  1. In a blender or a food processor, blend egg yolks and lemon juice until creamy.
  2. Microwave butter until melted and boiling hot. For a lighter and runnier sauce, mix in 1/4 cup of hot water.
  3. While the blender/food processor is running, slowly drizzle in the hot melted butter.
  4. Mix in cayenne and salt to taste.

Air fryer poached eggs.

  1. Preheat the air fryer by running it for 2 minutes at 350 F.
  2. Meanwhile, grease four mini ramekins (3~4 oz capacity) with oil. Crack an egg into each ramekin and top it with 1~2 tbsp of water.
  3. Place the ramekins in the air fryer basket. Air fry for 7~9 minutes at 350 F. Start checking the doneness at 7 minutes and add additional minutes per your preference.

Eggs Benedict

  1. Top toasted English muffin with a slice of Canadian bacon and a poached egg. Top with hollandaise sauce.
