It only takes three humble ingredients to make one of munchkin’s favorite side dishes—cauliflower, butter, and salt. When cooking for my kids, I learned that simple is better. Complicate things, and most likely, the dish will get rejected. This roasted cauliflower feels like eating creamy popcorn. And that creaminess is a big selling point for my kids. Cauliflower comes in various colors- white, yellow, purple, and green- but I stick to white and yellow cauliflower for this recipe as they make the creamiest texture.

How my kids started eating cauliflower

Cauliflower is one of my favorite vegetables; I could eat it raw. For my kids, however, it was a complete no until I drenched cauliflower in butter one day and sprinkled a generous amount of salt. Twenty-five minutes in the oven later, my kid’s favorite dish was born. Once their minds were changed, I didn’t have to use so much butter and salt anymore. There’s a big smile on munchkin’s face when she sees cauliflower roasting. Here’s a mom tip; Don’t be shy about seasoning when trying to win over your kids on a dish. It’s easy to cut back once they decide to like a particular dish.

It doesn’t matter whether you use salted or unsalted butter since we’ll add salt to taste. After you brush the cauliflower florets with butter, lightly sprinkle salt, and taste a small piece of cauliflower floret. Then you can gauge how much more salt to sprinkle.

I found that most baking sheets I owned warped at 425 F, except Nordic Ware sheet pans. (I have one with heart embossed!) Although it isn’t a big deal for this recipe, a good quality baking sheet will be invaluable if you bake in high temperatures a lot. For easy cleanup, line a baking sheet with parchment paper.

If you want extra flavor, you can grate parmesan cheese on top when the cauliflower florets are hot out of the oven. If you tried this oven-roasted cauliflower recipe, I would love to hear how it went!

Ingredients

  • cauliflower florets from 1 medium head or 12 oz bag
  • 3 tbsp butter melted
  • salt to taste

Instructions

  1. Position rack in the upper third of the oven. Preheat oven to 425 F.
  2. Lay cauliflower florets in a single layer on a parchment paper-lined sheet. Brush cauliflower florets with melted butter on both sides. Sprinkle salt to taste.

  3. Roast cauliflower for about 25 minutes until the edges are browned.
