Baked Feta Pasta with butternut squash and mushrooms

Ever since I tried the viral tiktok baked feta pasta, I’ve been making all sorts of baked cheese pasta. What I like the most about it is how easy it is to prepare. Pretty much dump everything in a casserole dish, bake, and you got a meal for the whole fam. I turned my old veggie pasta recipe to baked feta pasta by swapping beans with feta. They turned out so yummy, and my kids enjoyed it as well.

Below is an old clip of mine [Pasta with beans, butternut squash, and mushrooms], which was the base for this recipe. This recipe can be made plant-based if you omit the parmesan cheese. You can use the same method as the baked feta pasta but omit the feta and mix in “1 can (15.5oz) white beans, drained and rinsed” when you add garlic. Baked feta pasta with butternut squash and mushrooms

Ingredients

  • 1/4 cup olive oil plus more for drizzle
  • 1 red onion chopped
  • 15 oz chopped butternut squash
  • 1 tsp dried rosemary
  • 1 tbsp honey
  • 8 oz baby bella mushrooms halved
  • 1 8oz block of feta
  • 2 tbsp minced garlic
  • 1 lb cooked pasta
  • 1/2 cup grated parmesan cheese
  • 1/2 cup half n half or pasta cooking water

Instructions

  1. Preheat oven to 400F.
  2. Add olive oil, onion, butternut squash, rosemary, and honey to a casserole dish. Mix and gather the ingredients to one half of the dish.
  3. Add mushrooms and feta on the empty side of the dish. Drizzle more olive oil.
  4. Bake for about 40 minutes or until butternut squash is soft. If the edges of the onion start to burn, stir the mixture and continue to bake.
  5. Add garlic over butternut squash mixture when it is hot out of the oven and mix so the residual heat can cook the garlic.
  6. Mix in feta and mash with a fork. (I do this, so if my kids chose only to eat the pasta, they still eat some of the vegetables as a sauce.)
  7. Mix in mushrooms with the rest of the mash.
  8. Mix in pasta, parmesan cheese, and half n half. Adjust seasoning and top with black pepper or red pepper flakes as desired.
