School Lunch For My Kids: Red Pepper Grilled Cheese

When I prepared nacho night for dinner, I saved a cup of red pepper cheese sauce to make this grilled cheese. Packing this lunch in the morning was a breeze, with the sauce ready.

To test how the grilled cheese tasted after cooling down, I packed the same lunch for myself, stored it in a lunch bag with an ice pack, and ate lunch at 11:30 a.m. when my kids would eat lunch. Hubs was working from home today, so he got to taste test, too. The sandwich was lightly cool in touch. The cheese turned into a creamy texture like cream cheese, and it still tasted good! Hubs and I both enjoyed our lunch. As the filling cooled down, it held the bread together, making the sandwich easy to hold for little hands.
