Simple Ingredient Dish & Cooking for Munchkin
One thing I need to work on is to use all of the produce I buy before they go bad. I had a bunch of celery sitting in the fridge for quite a while after using only one stalk for chicken soup. Instead of buying extra ingredients to use the remaining celery, I googled how to cook the celery with minimal ingredients already in my kitchen. I found Spicy Fried Celery recipe, which looked promising since I’m not a fan of celery as the main ingredient but anything spicy is a different story. But then I had to come up with a non-spicy version for Munchkin too.
Initially, I didn’t have high hopes for this dish, but Munchkin couldn’t get enough of these buttery curried celeries raising her arms and kicking her legs asking for more. She finished the whole bowl.
1 cup sliced celery, 1 tsp low-sodium soy sauce, 1/2 tsp curry powder, 1 tbsp butter
a. Peel the outer skin of the celery and slice to the desired shape.
b. Make the sauce by mixing soy sauce and curry powder. Recipe for homemade curry powder.
c. Melt butter in a pan then add celeries and stir-fry over high heat for 1 minute. Add the sauce and stir-fry for another couple minutes till the moisture evaporated. Serve.
