Cooking for Munchkin
Pre-baby, weekends were for dining out, sipping cocktails, and strolling around the city. I rarely stepped on grass.
How such a little person can change everything.
Going out to enjoy nature with home-packed snacks is not only good for Munchkin, but it’s more convenient for me. The grass is free for Munchkin to crawl around and I have food right in my diaper bag.
For easy picnic food, I made grilled cheese with roasted red bell pepper. Red bell pepper and cheese are Munchkin’s favorites, so there was no question of her being picky. I didn’t have enough cream cheese here, so I substituted a tbsp of mayo. Otherwise, 4 oz of cream cheese would have worked well.
To make red bell pepper cheese:
(2 servings for Munchkin & 4 grilled cheese for adults)
2 roasted bell peppers, 4 oz grated sharp cheddar cheese, 3 oz cream cheese, 1 tbsp mayo, 1/4 tsp garlic powder, 1/4 tsp onion powder, 1 tsp Worcestershire sauce
a. Roast the bell peppers in an oven until the skin is charred, then immediately transfer the peppers into a sealed plastic bag. Let them cool until they’re comfortable to handle, and peel the skin off by hand.
b. Put all ingredients in a food processor and process.
That’s it! So easy and tasty.
