Cooking for Munchkin
It feels wasteful to throw out the beautiful skin of a fresh pineapple. Last weekend, I picked up a bag full of fresh tropical fruits to make smoothies, but feeling hesitant to cut open it, I left the pineapple on my counter close to a week.
Then I remembered one of my favorite childhood dish- pineapple boat fried rice- from a Thai dim sum place my family frequented. As a kid, I felt like a royalty eating this dish served in a gold colored bowl with a tall crown, and my father made sure to order one for me even after we were all full. What can be a better way to utilize the beautiful skin than to elevate a humble meal to a royal experience?
Munchkin is too young to appreciate such experience and got her portion served in a silicone plate. That’s ok. She relished her ever first shrimp fried rice.
To make Pineapple Boat:
1/2 of a fresh pineapple
Cut a fresh pineapple in half and scoop out the inside using a spoon.
To make Pineapple Fried Rice:
(About 1 serving for two adults and one toddler)
1/2 lb shrimp, 1 cup diced pineapple (5 oz), 2 shallots, 3 cloves of garlic, 1 cup cooked brown rice, 1 tsp minced ginger, 2 eggs (optional, not shown in picture), sauce (see below)
1 tbsp reduced sodium soy sauce, 1 tsp hoisin sauce, 1 tsp curry powder (here’s a link to homemade curry powder recipe)
a. Mix the sauce ingredients together in a bowl. Mince the garlic and shallots.
b. Cook the shrimps in a wok just until they turn pink. Remove the shrimps from the wok. I used raw frozen shrimps as I didn’t have any fresh ones. I defrosted the shrimps in warm water and patted them dry with a kitchen towel before cooking. I also chopped the shrimps after cooking for Munchkin.
c. (Optional) Beat the eggs with a fork. Pour egg mixture into a heated nonstick skillet and constantly stir until it’s fully cooked. Remove from heat.
d. Add the garlic, shallots, and ginger in the wok with 2 tbsp of cooking oil before heating the wok. Turn on the heat and cook for a couple minutes. Adding the minced ingredients into cold oil prevents them from burning too fast.
e. Stir in the pineapple and cook until they become tender. Reduce heat to low. Stir in rice, shrimps, egg (if using,) and sauce. Mix until the sauce is well combined with other ingredients. Remove from heat.
f. Pour the fried rice into a pineapple boat and serve.
