I can still feel the tension when hubby and I were eyeing the last piece of oxtail last time eating oxtail stew. So even though I already bought 2 lb of oxtail last weekend, I stopped by at the market to get another 2 lb before cooking. If I’m going to spend 4 hours cooking the oxtail, I better be full to the brim with oxtail alone.
And I’m glad I did because this stew turned out delicious: sweet and savory meat so tender, falling apart from the bones. I think Munchkin can agree too. It was one of the moments when she went “ummm~” with her first bite.
To make Oxtail Stew:
(About 3 servings for adults and 1 toddler)
4 lb oxtail, 1 Japanese radish, 1 big carrot, 10 shitake mushrooms
For broth: 1 onion, 7 white part of the green onions, 10 cloves of garlic, 1 tbsp peppercorns
For sauce: 1/2 cup low-sodium soy sauce, 1/4 cup maple syrup, 2 tbsp minced garlic, 1 tbsp minced ginger
Make the Broth:
a. Place the oxtails into a large pot, cover with water, and bring the water to boil. Water will turn foamy and murky. Discard the water. Wash the oxtails and the pot with clean water.
b. Place cleaned oxtails, onion, green onions, garlic, peppercorns into the pot. Cover the oxtails with water. Bring water to boil, then lower the heat and simmer for 3 hours.
Cook the Stew:
c. While the oxtails are cooking, make the sauce by mixing the sauce ingredients. Chop the carrot, radish, and mushrooms.
d. After 3 hours of simmering, oxtails would turn soft when poked with a wooden spoon. Take out the oxtails from the pot. Pass the broth through a mesh, and preserve the broth.
e. Marinate the oxtails with the sauce. Place them back into the pot along with the carrot, radish, and mushrooms.
f. Add 4 cups of broth into the pot. Cook on high heat occasionally stirring until the sauce is reduced to about 1/2 cup and vegetables are cooked. About 35-40 minutes.
Yummy oxtail stew is ready! Garnish with chives, if desired.
The meat was soft and juicy making it easier for molar-less Munchkin to swallow. She didn’t care for the veggies at first, going all in for the oxtails. When I mashed up the veggies and mixed with rice and more meat juice, she cleaned up the plate.
