Cooking for Munchkin
During the weekend, we stopped by at a Japanese ramen place on a whim. I didn’t pack any snacks for Munchkin, so I skimmed through the menu to find something suitable and found cheese egg rolls. I thought this could be an excellent way to add in some vegetables that Munchkin isn’t so thrilled eating on its own.
All you need is wonton wrappers, cheese, vegetable of choice, and flour paste. I used frozen broccoli and two different kinds of cheese- mozzarella and white cheddar.

12 wonton wrappers about 3″ square, 1/2 cup shredded mozzarella or cheddar cheese, 1/2 cup frozen broccoli, flour paste
a. Chop the broccoli and shred the cheese. I chopped the broccoli into small pieces to prevent Munchkin picking them out. Make flour paste by mixing 1 tbsp flour and 1.5 tbsp water.
b. Lay out the cheese and broccoli in the middle of the wrapper and fold as shown below. Use flour paste to seal the egg roll.
c. Heat oil in a skillet over medium-low heat and fry the egg rolls, first facing the open side up. When the cheese melts and holds broccoli in place, flip the egg roll and fry.
I made a few with cubed cheddar cheese since I already cubed them a few days ago, but the shredded cheese was easier to handle.
