Most days munchkin wakes up earlier than me, and of course, she is hungry. I used to start her day off with milk or smoothie, which required little preparation. It seems like this routine isn’t working anymore.
I’m noticing that my almost 13-month-old sleeps much better at night when she has a good amount of solid food during the day, and it’s better to start off strong with breakfast rather than trying to catch up during the afternoon.
I’m on a mission to compile ideas for quick and easy breakfast food.
To make Avo Tomato Toast:
(makes 4 toasts)
half avocado, 1 tomato, 4 whole grain toast, 2 slices of mozzarella cheese
a. Seed the tomato, if desired. I didn’t want my toast to be wet and mushy. I’m going to use the seeds for smoothies later.
b. Chop the tomato and avocado.
c. Sprinkle the chopped tomato and avocado on a toast and top with mozzarella cheese. Broil or toast in the oven until the cheese is melted.
